Waterbar Restaurant Announces New Proprietary Oyster
San Francisco’s Foremost Seafood Restaurant Partners with Washington State Oyster Purveyor to Develop the “Golden Fog,” Available Only at Waterbar
Waterbar co-owners Pat Kuleto, Mark Franz, Pete Sittnick and Parke Ulrich are pleased to announce the restaurant’s new proprietary oyster, the Golden Fog. Continuing to set new standards of sustainability, variety and excellence in the sourcing, preparation and presentation of food from the sea, Waterbar’s development of the Golden Fog not only adds a new premium oyster to the Waterbar menu, but marks one of the only proprietary oysters to be farmed for a standalone restaurant in San Francisco. The Golden Fog oyster will debut at Waterbar’s annual Oysterfest event on Sunday, August 28, and will be a permanent offering at the restaurant thereafter.
“Here at Waterbar we have an impressive daily menu of fresh-caught, sustainably raised fish as well as the most expansive selection of oysters on the West Coast,” said Executive Chef Ulrich. “We’re proud of the relationships we have developed with our incredible seafood and oyster purveyors and we trust them to provide us with only the very best. To work with Lou Guttilla in Washington State to identify a proprietary oyster for the restaurant takes that feeling of community and partnership to an entirely new level.”
Cultivated and harvested by Lou Guttilla in the glacially-fed waters of Washington State’s Hood Canal, the Golden Fog is mild and plump with a subtle sweetness up front and a gentle, briny finish. They’re suspension-grown just below the surface, which allows them, as Guttilla puts it, to be “tumbled by the tides.”
The partnership between Waterbar and Guttilla began as a friendship and developed into a partnership once Guttilla was able to provide the restaurant with a bounty of oysters to meet the demand of Waterbar’s devoted clientele. The Golden Fog oyster will only be available at Waterbar and not sold at any other establishments.
Waterbar has the most expansive selection of oysters on the West Coast, served sparklingly fresh from the famed oyster beds of California, Washington, British Columbia, Alaska, Massachusetts, Maine, Virginia, New Zealand, Prince Edward Island, New Brunswick and beyond. Waterbar’s oyster program is led by purchasing manager and oyster expert Eric Hyman, who worked closely with Guttilla throughout the Golden Fog cultivation process, and passionately sources all ingredients for the restaurant.
Waterbar also takes pride in its popular “Oyster Give-Back Campaign.” As part of the campaign, the restaurant donates five cents from every oyster sold to a selected charity that champions the bay and the local seafood community. The program has benefitted organizations including the Watershed Project, the Marine Mammal Center, and the Napa Valley Earthquake Relief Fund, among others.
