WAREHOUSE 72 AT HYATT REGENCY IRVINE TO OFFICIALLY OPEN DOORS AUGUST 15TH

Warehouse 72 Modern Bistro + Bar, Orange County’s newest upscale, modern American restaurant concept located at the renovated Hyatt Regency Irvine will officially open to the public on Thursday, August 15th.  Reservations are now available to book through OpenTable and a Grand Opening celebration is planned for mid-September.

 

Founded by Orange County native and restaurateur Doug Pak, the Warehouse 72 concept offers elevated dining experiences where art and creativity are celebrated through three key elements; modern art, modern design, and a modern American menu.

 

“Our mission is to create a welcoming space that promotes human connection and positive experiences. Every component of Warehouse 72 was designed with the guest experience in mind to merge culinary excellence and artistic beauty with the elegance of angels (72 being an angelic number) and community,” founder Doug Pak says. “I look forward to bringing this concept, which is so personal, to Orange County where my family has lived for 15 years.”

The restaurant’s 6,200-square-foot indoor-outdoor dining space is anchored by a first-in-the-country 30-foot LED digital art installation that plays a curation of rotating 3D art. Embracing tenets of beauty, vitality, and positivity, the overall design features soft colors, rich textures, and elegant, modern furnishings and fixtures to promote a serene energy and vibe. A raw stone bar top runs the length of the restaurant and offers indoor and outdoor service through large open-air windows.  Indoors, the main dining and bar areas boast abundant natural light, live plants, and a mix of large booths, family-style, and lounge seating, as well as private dining spaces. Outdoors, banquette seating is offered around the patio perimeter and is flanked by several lounge areas including a central fire pit.

 

The seasonal rotating food and beverage program, created by Executive Chef Jaime Salazar, reflects the same theme of positivity and vitality. With a focus on fresh, clean, and simple ingredients, sourced from vetted partners including Jidori Chicken, Salmon Creek Farms, Arka Salmon, and Sadie Rose Baking, the globally inspired food and drink menus offer selections designed to energize and rejuvenate the body and include gluten-free, vegetarian, and vegan options. Salazar brings over a decade of culinary experience to elevate modern California cuisine through menus featuring organic, non-GMO ingredients, free-range/grass-fed meats, and sustainable seafood.

 

Brunch includes Steak and Eggs (9oz grilled ribeye, herbed steak butter, hashbrowns, two cage-free sunny-side eggs), Ube Pancakes, loaded toast options, grain bowls, and the Chicken Curry Naan Wrap (grilled Jidori chicken breast, garlic naan, tomatoes, red onion, cilantro-cucumber raita). Dinner guests can enjoy starters including Black Truffle Arancini, Housemade Fried Mozzarella, and Charred Spanish Octopus (crispy smashed marble potatoes, cured chorizo, salsa verde, Aleppo pepper.) Standout entrees include Miso Glazed Wild Caught Seabass (local wild-caught seabass, kimchi fried rice, baby bok choy, togarashi) and Australian Lamb Chops. For dessert, Frozen S’mores are torched tableside and offered on a menu of dishes including Polenta Cake and Matcha-Coconut Milk Panna Cotta. The bar menu includes eight rotating, local craft beers on tap, signature cocktails prepared with top-shelf spirits, fresh local produce, and house-made infusions, an extensive wine list, and a selection of non-alcoholic beverages, to offer the perfect pairing for the elevated dishes.

During Happy Hour, which is available in the bar and patio from 4 pm – 6 pm Monday-Friday, guests can enjoy a special limited and discounted menu featuring bites such as Prosciutto and Fig Flatbread (sliced prosciutto, fresh figs, arugula, brie cheese, balsamic reduction), Kampachi Crudo, and Bone Marrow and Bourbon (roasted bone marrow, piquillo pepper chimichurri, shot of Buffalo Trace bourbon). The same ‘Late-Night’ menu will be available nightly in the bar area.

 

In addition to daily service, the restaurant will also offer prix fixe menus, private dining experiences, wine dinners, birthday and anniversary specials, corporate events, and catering. The restaurant is located at Hyatt Regency Irvine (17900 Jamboree Rd., Irvine, CA) and offers 3-hour validation for on-site self-parking.
