VIV AT 1 HOTEL SOUTH BEACH BY CHEF MICHAEL SOLOMONOV AND RESTAURATEUR STEVE COOK TO OPEN MARCH 14TH, WELCOMING RESERVATIONS BEGINNING MARCH 3RD

AVIV, the newest restaurant by acclaimed Chef Michael Solomonov and Restaurateur Steve Cook, from the five-time James Beard Award-winning hospitality group CookNSolo, announces the restaurant will debut at 1 Hotel South Beach on Friday, March 14th and reservations will open March 3rd via Resy.

 

AVIV, which means “spring” in Hebrew, will offer a refined culinary adventure that embraces ancient cooking methods paired with the modern energy of Miami and Tel Aviv. Guests will enjoy vibrant cuisine steeped in the rich flavors of Israel.

 

“We couldn’t be more excited for the wonderful people of Miami to experience our newest concept,” says Solomonov and Cook. “Aviv will be a soulful dining experience, combining ancient cooking methods, with modern techniques.”

 

Specialty dishes on the dinner menu include Saluf, Yemenite flatbread baked-to-order, served with Chef Solomonov’s signature ultra-creamy Hummus-Tehina. Mezze includes Haloumi Baklava with quince and pistachio with dishes prepared over the charcoal grill, including Pompano with sea bean tzatziki featuring extra crispy skin on the classically buttery fish, as well as RibEye Shishlik with grilled tomato and sumac onions. Beverages at AVIV will center around easy-drinking, citrus-forward cocktails that evoke a breezy beach feeling and a list of wines from Israel, Lebanon, and the wider Eastern Mediterranean. Signature cocktails include the Zhoug, a bold and zesty twist on the classic margarita with a hint of spice and the Black and White Cookie, a rich and indulgent cocktail evoking the essence of dessert – both perfect before dinner or for a nightcap while embracing Miami’s vibrant nightlife.

 

The space on the ground level of 1 Hotel South Beach has been completely reimagined by Post Company as a celebration of texture and materiality, featuring elements such as linen, coquina stone, zellige tile, textured glass, and hand-painted murals. The 132-seat restaurant will feature an open-kitchen with indoor and outside seating, a private dining room and a dedicated bar and lounge that welcomes guests through deep coquina thresholds.  The open kitchen anchors the room and features views of Chef Solomonov from an exclusive chef’s counter. The outdoor terrace’s garden-like environment with plush furnishings and tropical plants, brings a distinct Miami flair. An additional private dining room allows for larger groups to host intimate events.
