The Viceroy Riviera Maya is turning up the heat for guests interested in new culinary experiences and insights with a Master Grilling Class taught by the resort’s head chef and grill master.
“The concept of my Master Grilling Class is to teach in a professional but relaxed manner the secrets of Mexican barbecue cuisine,” said Chef Jetzabel Rojas Barragán.
“The class is very comprehensive, addressing a full range of foods and techniques. We work with a variety of ingredients to prepare marinades and grill everything from meats, poultry and seafood to fruits and vegetables.”
Cooking on wood-burning grills to bring out exceptional flavors is a keystone of Mexican cuisine, and the 1.5-hour class is a primer on how it’s done. Chef Jetzabel takes you on an educational journey on how to grill different types of foods, the use of woods for different flavors, and how to make marinades and glazes to imbue the foods with mouth-watering and juicy flavors.
For the class, local Jaa´bin or Zapote woods are used, which are reminiscent of mesquite. The woods impart bold flavors of spiciness, citrus, piquantness and sweetness to the foods being cooked, which include rib eye steak, chicken, pork, local fresh fish, shellfish, pineapple, peppers and other produce.
At the end of the Master Grilling Class, you’ll sit down to a delicious lunch of the foods prepared during the class. The class is held in the Xcalacoco Garden at the edge of the sand and is generally for two couples. The class is $95.00 per person and includes a pairing of Mexican artisanal beers with lunch. Participants also each receive a chef’s hat and an apron that says on it: Master of Grilling at VRM.
