Tomato Carrot Soup
- 5 tomatoes
- 3 carrots
- Salt & Pepper
- 1 tsp of dried dill
- 1 tsp of parsley (optional)
- 1 tbsp of olive oil
- Juice the tomatoes and carrots in an Omega VRT400.
- Add salt and pepper, dill, parsley and olive oil.
- Serve.
If you want it warm, simmer for 10 minutes on stove top over medium heat. Use the leftover pulp from the carrots and tomatoes for homemade salsa. Add in 2 chopped tomatoes, ½ onion. Salt. Some chopped cilantro. And a few tbsp of olive oil. Enjoy!
Corn Carrot Soup
- 2 cobs of fresh corn
- 1 carrot
- Salt & pepper
- Cut the corn off the cob.
- Juice the corn and carrot in an Omega VRT400.
- Add salt and pepper.
- Serve.
** If you want warm soup, Omega suggests adding ½ chopped onion and 1 or 2 cups of vegetable stock. Simmer the onion. Then add the corn and carrot juice. Then add 1 or 2 cups of vegetable stock. Simmer for 10 minutes on stove top over medium heat. Add a dash of cream if you want a thicker soup.
