With spring pouring fresh local produce into Chicago markets, chefs are clamoring for interesting and new salad ideas. In creating the spring menu for Great Street restaurant, Executive Chef James Samson plans to roll out a Kale Caesar Salad that uses luscious local produce to put a new twist on the classic favorite.
“Using Tuscan kale and sourdough to sidestep the traditional ingredients brings a whole new depth of flavor to the Caesar salad,” says Samson. “The recipe also includes roasted tomatoes, freshly grated Parmesan Reggiano and white anchovies to give the dish a delicate smoky finish.”
Great Street Restaurant, housed in the Renaissance Chicago Downtown Hotel, is reopening its doors June 1st after a $2 million renovation. The contemporary American fare will feature a wide range of locally-sourced and seasonal selections.
