The Setai, Miami Beach, recently voted as “Best Hotel in Miami” by readers of Condé Nast Traveler, has launched a monthly Wine Dinner Series offering hotel guests, visitors and local residents an evening of inventive cuisine paired with exceptional wines from acclaimed wineries around the world. Hosted in The Restaurant at The Setai and curated by The Setai’s executive chef, Mathias Gervais and Chef Sommelier, Dwayne Savoie, each gourmet wine dinner will have a unique theme.
“Pairing wine with food is more art than science, and our culinary team enjoys this monthly opportunity to create a bespoke menu designed to complement our featured wines and please the discerning palates of the guests who dine at The Restaurant at The Setai,” said Chef Gervais. “We first confirm the featured winery, taste the wines, and then I work with my culinary team and sommelier to design a tasting menu that highlights these fine wines and their respective geographical origins.”
The Restaurant at The Setai’s next Wine Dinner Series event will be held on Thursday, July 31, 2014. It will feature Castello Banfi wines, hand-chosen by Luciano Castiello, National Ambassador for Castello Banfi and Banfi Piemonte. Chef Gervais took inspiration from the Italian vineyard’s philosophy of innovation when creating his menu, which features such dishes as Porcini Risotto, organic Aquarello Rice with Porcini Cappuccino, Chicken Jus and Fonduta of Taleggio.
The July 31st four-course Castello Banfi wine dinner menu features:
· Canapés paired with Cuvée Aurora Rosé (2009): Cones of gorgonzola with Prune marmalade, white chocolate and candied olives; chorizo madeleine; acras of baccalat
· Maine Diver Sea Scallops with Chadonnay Fontanelle Castello Banfi (2012): Minestrone with corn, flageolet and garganelli.
· Poricini Risotto with Super Tuscan Excelsus Castello Banfi (2009): Organic Aquarello Rice with Porcini Cappuccino, chicken jus and fonduta of taleggio.
· Pat Lafrieda Dry Aged Striploin with Brunello di Montacino Poggio all’Oro, Riserva Casdtello Banfi (2007): Served with potato chips, sun dried cherry tomatoes, parmigiano reggiano and summer truffle.
· Apricot Soufflé with Moscadello Florus Castello Banfi (2010): Classic soufflé with apricot confiture, moscadello and honey sorbet.

The intimate evenings commence at 7:30 p.m. with a reception, followed by dinner at 8:00 p.m. The prices for each dinner vary; the Castello Banfi dinner is $150 per person, inclusive of tax and gratuity.
