The Seagate, a luxury hotel in Delray Beach, Florida, has hired two key leaders to oversee the new Bourbon Steak Delray Beach, a restaurant from acclaimed chef and restaurateur Michael Mina set to open at the resort in February 2025. Chef Pablo Valencia will serve as the executive chef of the restaurant, leading the food and beverage program, while Adam Moreira will supervise restaurant operations as the new general manager.
Chef Valencia is a Colombian native that has led culinary programs in various hotels and restaurants across the globe for over 12 years. Most recently, he served as the executive sous chef at Kalatua, a beachside Caribbean restaurant in St. Martin. He has also previously led culinary teams at Ritz Carlton locations in Key Biscayne, Florida and Tysons Corner, Virginia. In 2019, Chef Valencia established his own food service company and has worked with notable restaurants across Colombia including Mystique fine dining restaurant, which earned him a Five Star Diamond Award by the American Academy of Hospitality Sciences. He received culinary arts training from Johnson & Wales University in Providence, RI.
Adam Moreira joins The Seagate following a three-year tenure as assistant general manager at the Mastro’s Ocean Club in Miami. There Moreira led the opening of the new eatery, including the hiring, training and development of all managers and staff. Previously, he served as the general manager of Swan, owned and operated by David Grutman and Pharrell Williams, and of Morton’s Steakhouse in Boca Raton, Florida, managing day-to-day operations including overall guest experience and staffing. Moreira holds a master’s degree in international business from Florida International University.
Moreira is a current Florida native, while Chef Valencia will be relocating from Cul-de-Sac, St. Martin for his new role.
