Chef Kevin Malone grew up in western Massachusetts where his culinary journey began in high school alongside his father, a chef. His path to The Inn at Mattei’s Tavern began in 2015, where he was hired as a line cook. Malone was eager to hone his craft, and he credits his early development to the mentorship and high standards around him. Following the Tavern’s temporary closure, Kevin returned to Mattei’s in September 2023—this time as Chef de Cuisine—marking a full-circle moment as the hotel and restaurant reopened under the Auberge Resorts Collection.
Now, as Executive Chef, he plans to lead the kitchen he has always called home. Malone strongly believes in leading by example and is excited to motivate his team through dedication and active involvement. His menu balances nostalgia with innovation, honoring Mattei’s history while offering fresh takes on classic dishes. As Executive Chef, he will oversee four food and beverage venues at The Inn at Mattei’s Tavern, including The Tavern, the signature restaurant celebrating the region’s abundant produce with thoughtfully crafted dishes.
