The Doyle Collection, the luxury Irish family-owned hospitality group, announces the hiring of two new team members to helm the food & beverage outlets at its Washington, DC, property, The Dupont Circle Hotel. Tom Murphy has been tapped as general manager at The Pembroke, the hotel’s MICHELIN-recommended all-day European-American restaurant, and Chrissy Sheffey will serve as general manager at Doyle Bar, the swanky mid-century cocktail bar. Tom was previously the general manager at Doyle Bar before moving across the hall to The Pembroke.

Hailing from County Cork in Ireland, Tom’s passion for Irish hospitality and wealth of expertise in global dining and cocktail culture are evident in the creative direction he brings to the restaurant. At The Pembroke and its neighboring coffee and pastry bar Doyle & Co., Tom is responsible for ensuring the guest experience mirrors the bespoke, meticulous service that defines The Dupont Circle’s legacy. Tom frequently collaborates with Executive Chef Christian Welch, Food & Beverage Director Krystle Hewitt and General Manager Mark Payne to seamlessly connect each moment of the guest’s stay – from check-in and in-room dining to exquisite brunches and dinners in the restaurant. With Tom’s experience leading Doyle Bar, his breadth of knowledge in cocktails and wines perfectly complements chef Christian’s seasonally driven menu. Tom also oversees the restaurant’s signature Irish Wine Geese menu, a collection of bottles crafted by makers each with their own Irish heritage.
Tom’s impressive hospitality background includes recognition as Munster and Ireland’s Front of House Manager in 2023. His vibrant personality and dedication to excellence position him as a rising thought leader in Washington, D.C.’s food and beverage community.

Chrissy Sheffey is a Prince George’s County native, WSET spirits educator, farmer and award-winning beverage experience curator with over 15 years of diverse hospitality expertise. Known for her innovative approach to sustainable mixology, she has built beverage programs that maximize ingredients, reduce waste, and tell compelling stories through thoughtfully crafted cocktails. She plans to implement this ethos in her role at Doyle Bar, ensuring cocktails are guided by the season and invite guests on a journey by way of a glass.
Chrissy’s passion for community extends beyond the bar. She founded Fairhill Dreams, Inc., a nonprofit supporting local agrarians and community education through charity events like The Spirited Sole Garden, a pop-up cocktail fundraiser benefiting local organizations. In 2017, she founded a beverage consulting agency dedicated to connecting farm culture with creative mixology, earning recognition from The New York Times in its “Cocktail Renaissance” feature. Prior to joining the Doyle Bar team, Chrissy oversaw the beverage program at The Jefferson Washington, D.C.
