Continuing to elevate its award-winning cuisine, Strip House Las Vegas launches it’s all-new Dock-to-Dish sustainable seafood program in partnership with Honolulu Fish Company. Guests visiting the popular steakhouse can now enjoy the freshest, high-quality, hand-selected pieces of fish caught no more than 16 hours prior to being served from the Pacific waters of Honolulu, Hawaii.

Dock-to-Dish fish selections are line-caught in a region 375 miles north of Oahu known as the Fracture Zone, a region of the Pacific Ocean ideal for fishing this time of year. With fish in feeding mode as opposed to migrating mode, rich oil and low water content in the meat is delivered. Prime season for several species, the fish being flown in is at the peak of its flavor.

“We’re seeing a shift toward lighter food, especially as we approach the summer months,” said Corporate Executive Chef Michael Vignola. “Our Dock-to-Dish nightly specials provide something exquisite for guests to enjoy as an entrée or accompaniment to their meal. The day’s best catch from over 30 varieties are prepared lightly, just simply finessed, to really showcase the nuances of the fish.”

Highlights of the types of fish Chef Vignola and his culinary team are using include, Monchong, Ono, White Walu, Nairagi, Kajiki and Opah, amongst others. The focus stays on the fresh day-boat piece of fish, cooked with minor accents like charred tomato vinaigrette or heirloom tomato chimichurri. Staying true to Chef Vignola’s philosophy of quality over quantity, the restaurant orders a limited supply of the freshest fish caught on any particular day to serve during dinner service.
