Austin’s whiskey distillery will release its first aged product next year
Still, Austin Whiskey Co. plans to release their first aged product, a bourbon whiskey, in Spring of 2019. The whiskey will feature 100% Texas-grown corn, rye and barley, grown by local farmers. The bourbon whiskey has been 100% milled, mashed, fermented, distilled and matured by hand, at the distillery, located in the heart of South Austin at 440 East Saint Elmo Road.
“We take great pride in working directly with Texas farmers to be a true grain-to-glass distillery,” said Still Austin’s Head Distiller, John Schrepel. “We’ve put a lot of focus on the grains with our whiskeys and are really excited for people to taste it.”
By utilizing a slow water reduction technique, Schrepel is fine-tuning the whiskey’s flavor by reducing the proof slowly as the spirit ages. Each barrel is currently being tasted monthly and only the best barrels will be chosen for a limited first release. The slow water reduction process will enhance the maturation of the bourbon whiskey and will help bring out the full potential of the spirit.
Still Austin is working with Master Blender, Nancy “The Nose” Fraley, to determine the optimal reduction process that will take advantage of the unique Texas environment. Nancy is impressed with how the spirit is aging and said, “The whiskey is coming along beautifully. I have never tasted a whiskey that has accomplished what this whiskey has accomplished this early. I am very excited about this product. I think they have a real gem on their hands.”
In addition to the Bourbon Whiskey, Still Austin’s collection of spirits includes Texas Rye Gin, New Make Whiskey, Mother Pepper Whiskey and Daydreamer Whiskey, all of which are made 100% from Texas-grown grains.
