Seoul Taco’s innovative menu showcases the recipes and flavors of Chef Choi’s Korean-American upbringing in the St. Louis suburbs. Guests can pick their protein for dishes such as the Steak Tacos with Korean salad mix, green onion, secret “Seoul Sauce,” crushed sesame seeds, and a wedge of lime; or one of Choi’s favorites, the Spicy Pork Gogi Bowl, his take on bibimbap, with rice, fresh veggies, fried egg, carrots, green onion, sesame oil, and spicy Gochujang pepper sauce. The menu features a selection of unique side dishes such as the Kimchi-Fried Rice and Kimchi Slaw

The Chesterfield restaurant is the first Seoul location that features the work of both Chicago and St. Louis-based artists. Choi collaborated once again with Chicagoan Alex Morales of Smartmouth Design to bring Seoul Taco’s characteristic interior to life. The vibrant restaurant design includes a display of a deconstructed Seoul food truck as well as street-art murals by local artist Daniel Burnett. The Chesterfield location also features signature “Boom Box Wall” composed of salvaged vintage stereo systems. Additionally, Choi worked with David Stavron of St. Louis’s Shellback Iron Works to design the furniture, which was created from reclaimed wood and iron.

About Seoul Taco

What started as a popular Korean-Mexican food truck in St. Louis has grown into four Seoul Taco fast-casual restaurant locations in St. Louis and Columbia, MO as well as Champaign and Chicago, IL. Seoul Taco’s mobile beginnings helped the concept quickly gain a following among urban Millennials, who fell in love with restauranteur David Choi’s affordable, approachable take on grab-and-go eats made with fresh ingredients. The menu combines Choi’s mastery of classic Korean BBQ with a fun nod to Mexican street fare in their delivery formats. By designing each location uniquely with the help of local artists, Choi aims to make each Seoul Taco integral to the community—both a place to eat and to meet.
