Scribner’s Catskill Lodge is pleased to announce the appointment of Chef de Cuisine Alejandro Reyes Herrera to helm its culinary team at Prospect. Inspired by the rich and diverse offerings of the Hudson Valley, Prospect serves up a playful twist on local cuisine while presenting a picturesque view of the Catskill Mountains.
Chef Alejandro, originally from Puebla, Mexico, brings a wealth of experience to Prospect at Scribner’s Catskill Lodge. With a background in working at, Cocina Hermanos Torres, a prestigious three Michelin Star restaurant in Barcelona, Spain, where he was part of the team that elevated the restaurant from two to three stars, Alejandro’s culinary journey is nothing short of remarkable.
Herrera’s move to the Catskills was driven by a desire to be in the mountains and embrace a different environment. Inspired by people and the changing seasons, his cooking is a heartfelt act of service through his passion for food. At home, he enjoys making versatile and comforting pasta, and he has a penchant for collecting rare, handmade knives. Proud of his adaptability and achievements, Alejandro is dedicated to creating an excellent culinary experience at Prospect.
“I am a huge fan of bringing in fresh produce, both from the Hudson Valley and our very own Scribner’s Garden,” said Chef Alejandro. “I was inspired by spring and summer flavors—herbs, citrus, and flowers. I wanted to create a really beautiful and colorful menu, which you can see on the plate. That being said, a beautiful plate comes with a tasteful dish, and we hope that when everyone comes through Prospect, they enjoy what my team and I have created.”
