Lighting also sets an atmosphere that affects a restaurant guest’s appetite, type of menu selections, comfort and overall experience. One Journal of Marketing Research study found that “ambient light luminance influences mental alertness, which in turn influences food choices.” Ideally, dining area lighting, color pallet and wall treatments—particularly those with visual cues and triggers—exist and work in synch to encourage patrons to not only eat, but also crave the type of food the establishment proffers. This while also connecting with the guest emotionally, such that they will want to return time and time again and refer friends and family to do the same.
Layout as a USP
Imagine walking into a crowded restaurant where you have to share a table with strangers—or sit unappetizingly close. Now, imagine walking into a spacious restaurant where the chairs and tables are arranged in a mosaic pattern. The former restaurant may leave you with an uncomfortable experience, but the latter may facilitate warm memories.
A thoughtful layout design is fundamental to an eatery’s success, and elements therein are psychological sales drivers. Sometimes, a stellar space can even elevate perceptions about the F&B provisions, themselves.
