Rebekah Eastman Named Executive Pastry Chef for Selanne Steak Tavern and The B8Kery by Selanne
Co-owners/partners Teemu Selanne and Kevin Pratt are pleased to welcome Rebekah Eastman as executive pastry chef at their upscale classic tavern and steak house, Selanne Steak Tavern on Laguna Beach’s iconic Pacific Coast Highway, as well as for the adjacent new b8kery by Selanne.
At both the award-winning Selanne Steak Tavern – celebrating its 10th anniversary this month – and newly opened the b8kery by Selanne, Eastman will oversee all operations and culinary needs for the creation of pastries and breads. Her responsibilities include recipe development, procurement, preparation, presentation, quality control, training and supervising pastry staff.
“Rebekah is well known for her pastry talents, attention to detail, positive leadership qualities and team-building prowess,” said Selanne and Pratt. “We are excited by her vision and ability to meet important challenges and, of course, her delicious creations as we continue to grow Selanne Steak Tavern and take on our newest venture, the b8kery.”
Eastman’s sophisticated and innovative desserts at Selanne Steak Tavern are created to complement the fine dining experience the restaurant’s culinary team, helmed by Executive Chef Vincent Terusa, provides for its guests. Menus change seasonally and for this fall and winter season, her desserts include Souffle Du Jour; Spiced Basque Cheesecake with cranberry glass, pumpkin curd, candied pepitas; Apple Ricotta Zeppole with salted caramel and mulled spice anglaise; and Chocolate & Coffee composed of devil’s food cake, chocolate hazelnut mousse and coffee ice cream. As pastry chef, Eastman is also responsible for the special desserts served at Selanne Steak Tavern’s private dinners, those for special celebrations and holiday confections. At the b8kery by Selanne the classic offerings to tempt visitors are Blueberry Streusel Muffins, Lemon Pound Cake, Selanne’s Orange Rolls, Ham, Cheese & Scallion Scones, Shortbread, Coffee Cake, Brownies, Cookies, Almond Croissants and many more delicacies.
Her prior pastry chef experience throughout Southern California includes pastry chef at Michael Mina’s Bourbon Steak in Dana Point, pastry chef at Lido House Hotel in Newport Beach and pastry cook at St. Regis Monarch Beach in Dana Point.
