PARK LANE NEW YORK WELCOMES CHEF ALI DEY DALY AS DIRECTOR OF CULINARY

Park Lane New York, a Highgate-managed hotel positioned on Billionaire’s Row, is proud to announce the appointment of Chef Ali Dey Daly as Director of Culinary. With over a decade and a half of hospitality experience under his belt, Chef Dey Daly’s hiring reflects Park Lane New York’s ever-growing commitment to culinary excellence. He will serve as the creative force behind the property’s three distinctive dining concepts: Calvert’s, the hotel’s elegant second-floor restaurant, which opened in July 2024; Rose Lane, the light-filled and open lobby bar; and Darling, the iconic rooftop lounge situated atop the 47th floor.

 

Chef Ali Dey Daly is an award-winning culinary leader with over 15 years of expertise in fine dining and restaurant management. As Vice President of Culinary at Highgate, he has transformed F&B operations across the company’s diverse portfolio through his passion for innovation and operational excellence. Previously, Chef Dey Daly held the position of Executive Chef at the prestigious Baccarat Hotel New York, a 5-star, 5-diamond property, where he oversaw the development of several new menus, and his leadership resulted in a significantly increased F&B revenue and improved the hotel’s ranking across numerous platforms. Chef Dey Daly holds a Master’s Degree in Culinary Management, Leadership & Innovation from Institut Paul Bocuse in France. Today, he continues to shape Highgate’s F&B operations into a benchmark of distinction in the hospitality industry. Bringing a wealth of expertise to his role as Vice President of Culinary at Highgate, as well as his new title as Director of Culinary at Park Lane New York, Chef Dey Daly’s exceptional skills and unwavering commitment to service promise to maintain the property’s status as a premier dining destination on Central Park South.

 

When crafting his first menu for Darling, Chef Dey Daly aimed to embody Park Lane New York’s vision – offering guests a dining experience that seamlessly blends whimsy and luxury. This is reflected in the latest “Indulgences” menu at Darling Rooftop, which includes opulent offerings such as Shrimp Toast with furikake, sriracha aioli, and smoked trout roe, as well as a sumptuous take on spinach and artichoke dip in the form of Crispy Artichoke and Goat Cheese, which is paired with tomato confit, pesto, parmigiano, and roasted peppers.
