Park James Hotel, managed by broughtonHOTELS, announces the appointments of Marigene Mabalot as Director of Food & Beverage and Simona Oliveri as Executive Chef. Both bring extensive hospitality and culinary expertise to Park James Hotel and Oak + Violet restaurant.
As the new Director of Food & Beverage Marigene Mabalot oversees all day-to-day food and beverage operations for Park James Hotel including the management of Oak + Violet, O+V Courtyard, and the cocktail curation at the Park James lobby bar.
As Executive Chef Simona Oliveri handles all culinary operations for the property including menu creation and execution at Oak + Violet, featuring California farm-to-fork cuisine, O + V Courtyard, group meetings and events, and room service.

Marigene brings years of restaurant operations and food and beverage management to Park James Hotel. Most recently, Marigene was Senior Food & Beverage Manager at Hotel Spero and Jasper’s Corner Tap & Kitchen in San Francisco. There she oversaw all daily F&B operations for the hotel and restaurant. Prior to that she spent two years as Food & Beverage Manager at OTO Developments, Hilton Garden Inn, Palo Alto. Previous management positions include Guest Service Manager at Paul Martin’s Grill, and Hospitality Manager at PF Chang’s China Bistro.
Simona joined Oak + Violet as a sous chef upon the California craft kitchen’s opening in November of 2018 and was an integral part of the culinary team and direction. Prior to that she was the owner and executive chef of Bonifacio Fine Catering — a premier Silicon Valley catering company with a focus on organic cooking.
