RIVIERA BEACH, SINGER ISLAND, Fla. 3800 Ocean, the award-winning signature restaurant of the AAA Four Diamond-rated Palm Beach Marriott Singer Island Beach Resort & Spa, has named James King executive chef. With extensive South Florida experience from top dining destinations like Delray Sands Resort, Miami Four Seasons and The Breakers, King will direct the resort’s award-winning culinary program under the expertise of assistant general manager and former executive chef Larry LaValley.
A graduate of the International Culinary Academy in Pittsburgh – now known as Le Cordon Bleu – with a degree in culinary arts, King has since gathered 17 years of experience leading numerous farm-to-table and fine dining concepts with a special focus on seafood.
“We’re thrilled to have James King overseeing the culinary program at Palm Beach Marriott Singer Island Beach Resort & Spa,” said Roger Amidon, the resort’s general manager. “James brings a wealth of knowledge in successfully developing and executing top-quality menus, and exceeding guest expectations and business goals. Visitors are already raving about the new flavors and dining options.”
Over the years, King has participated in events like the Palm Beach Food and Wine Festival, the South Beach Food and Wine Festival, and several South Florida charity events. He has appeared on television to showcase some of his unique seafood dishes, and was invited to cook at the James Beard House in New York City while serving as executive sous chef of the opening operational team at One Ocean Resort & Spa.
