Mirbeau Inn & Spa has promoted Abigail Freund to Pastry Chef. A valued member of the award-winning Finger Lakes retreat’s food and beverage department since Nov. 2013, Freund will now oversee the restaurant’s pastry team in her new role while continuing to create inventive twists on classic confections for the restaurant’s French-inspired menu.
Guests of Mirbeau will be able to enjoy Freund’s new additions to the dessert menu including Café et Beignets (an espresso and white chocolate pot de crème, topped with milk foam and served with vanilla sugar beignets), Lemon Panna Cotta (served with basil and Limoncello macerated blueberries, lemon streusel, and fresh blueberry sorbet), and a Classic Pecan Tart (served with bourbon and maple ice cream, and a crisp brandy snap tuille).
Prior to joining Mirbeau, Freund worked at the prestigious Langdon Hall Country House Hotel and Spa in her native Ontario, Canada. She holds a Culinary Arts degree from Conestoga College, where she received the Victorinox Award of Excellence for talent in the hospitality field, and currently resides in Syracuse, N.Y.
