Highly Anticipated Restaurant Concept within Eataly Las Vegas Will Feature Impressive Wood-Burning Grill and Dry-Aged Program
Manzo, an intimate Italian butcher’s restaurant with a wood-burning grill, will open at Eataly Las Vegas at Park MGM on February 13. True to its name, Manzo will celebrate all things meat, focusing on high-quality prime cuts and modern takes on traditional Italian favorites.
Manzo — which means “beef” in Italian — is a celebration of sustainable butcher farms and Italian culinary heritage. Featuring a romantic design inspired by the classic Italian macelleria, or butcher shop, Manzo will offer a casual elegance ideal for any occasion. Eataly Las Vegas Executive Chef Nicole Brisson along with Manzo Executive Chef Arnold Corpuz have designed a menu that showcases the region’s prime quality meats, vegetables, and herbs, sourcing the purest ingredients from regions in states such as Nevada, Kansas and Colorado. Central to the restaurant is its custom-built, three-tier wood-burning grill, for which a careful selection of white oak, apple wood and coals is used to lend each dish its delicately rustic flavor. As guests walk into the restaurant, they will be immediately greeted by robust aromas and crackling sounds of the exposed burning flames.
“Being able to cook these amazing cuts over live coals brings a whole new level of flavor,” said Brisson. “I really want to make sure guests can see, smell, taste and appreciate the attention to detail at Manzo.”
Intimately set aside from the bustling marketplace, Manzo will offer an up-close-and-personal dining experience. Embracing the timeless butcher-counter feel, guests will be able to sit at the bar or directly in front of the grill to get an even closer look at the exceptional preparation of dishes alla griglia (grilled). Manzo’s signature dish will be the 40-ounce “Ribeye Appesa,” suspended over the grill, slow-roasted and reverse-seared to perfection. As befits Italian tradition, the menu also will include dishes featuring fresh pastas made in-house by Eataly’s very own pasta makers.
Located in Eataly’s marketplace just steps away from Manzo’s entrance, guests can begin their night with a pre-dinner libation at Gran Caffè Milano. The bar’s beautiful Italian design includes a ceramic tile replica of the famous bull mosaic in Milano, an iconic symbol of good luck, and is inspired by the elegant cafes of Milano with the Italian appreciation of fine art extending directly into the Italian butcher restaurant. Inside Manzo, guests can choose from an extensive wine list of over 400 Italian bottles divided by region and an enticing series of signature cocktails mixing favorite Italian liqueurs. The cocktail program, curated by Director of Development Operations Sabrina Mazza, will invite guests to enjoy classic cocktails with a modern twist. The signature cocktail, “Bull’s Rye” is made with pancetta-washed 6-year Templeton Rye and chocolate bitters served over a large ice cube stamped with the iconic bull. It’s finished with an Amarena cherry and orange peel aromatized with burnt chocolate bitters. Each cocktail will tell a story such as the “G&T n. 6 ½,” aptly named for the number of Eataly stores in North America.
Charming and lively, Manzo will be the perfect fusion of the elegance and spectacle for which both Italy and Las Vegas are rightly renowned. Beginning February 13, Manzo will be open from 5 p.m. to 11 p.m., Tuesday through Sunday. Manzo will offer an intimate private dining room for up to 10 guests.
