M by Tasuku Murakami – an omakase experience in Atlanta

With Co-Executive Chef Todd Dae Kulper leading the kitchen and Co-Executive Chef Tasuku Murakami (who previously worked at MICHELIN-starred restaurants Ginza Iwa in Tokyo and Sushi Azabu in NYC) leading the sushi program, Umi’s menu offers an experience for the senses with the highest quality ingredients and freshest fish and proteins sourced daily from around the globe – all set to the backdrop of Umi’s dark and moody dining room designed by the late Atlanta artist, designer and icon Todd Murphy.

 

Starters include the likes of Tuna Truffle Chips – salt, black pepper, soy sauce, truffle oil, horseradish & caviar, Yellowtail Jalapeño – thinly sliced yellowtail, jalapeño pepper, cilantro & ponzu sauce, guest-favorite Spicy Tuna Crispy Rice – spicy tuna tartare on lightly fried crispy sushi rice with jalapeño, Sake Cheese – housemade sake cream cheese, sake lees, miso, mirin, black pepper, avocado & caviar, and soups and salads, including the raved about Avocado Salad with wasabi vinaigrette.

 

The sushi selection features sashimi, traditional nigiri, sousaku nigiri (chef’s signature creations), box sushi and specialty traditional & house rolls that span continents, like the Foie Gras Roll – bluefin tuna with a scallion roll, topped with foie gras, wasabi soy sauce & serrano pepper truffle oil and a Surf & Turf Roll – shrimp tempura with mayo, sliced & torched A5 wagyu beef, soy sauce, chimichurri sauce & tempura crunchy flakes. Chef Kulper dishes up hot dishes, like Lobster Toban-Yaki with lobster beurre noisette and Smoked Duck Breast Tataki with shingo pear & aged balsamic vinegar. For those looking to let Umi’s team do the decision making, guests can opt to do Miyabi, where the culinary team sends out a coursed starter, sashimi plate, hot dish, assorted nigiri and dessert, or the the more expansive Umi-Kase, featuring a multi-course, chef-selected dinner with sushi and Umi’s greatest hits. The restaurant also offers vegan and vegetarian tasting menus, offering dishes such as Eggplant Misoyaki with crispy garlic & nori furikake and King Oyster Mushroom Toban with soy brown butter.

 

The culinary team serves desserts like Mille Crepes – paper-thin crepes layered with light vanilla pastry cream, Angel Food Cake – topped with vanilla ice cream & yuzu sauce, their famed Donut Touch My Donut, and the coveted Chocolate Kyu. With only around a dozen being available each night, the prized dessert features a Valrhona chocolate sphere filled with fresh berries, red bean pastry cream & mascarpone cream infused with Tamazaki 18-year whiskey sauce. To top off the meal, each guest receives a Jardi Chocolate bonbon filled with raspberry ganache and crispy pearls that pop in your mouth.

 

Behind the bar and curated to complement the menu’s thoughtful and refined techniques, Umi’s libations menu offers an expansive selection of exclusive craft sake, classic & signature cocktails, premium wine and champagne curated by the restaurant’s Level III Advanced Sommelier Joon Lim, fine spirits and a tight list of Japanese beers.

 

M by Tasuku Murakami

Hidden just one floor above the main dining room, Umi’s newly opened sister concept M by Tasuku Murakami welcomes guests to an intimate eight-seat omakase experience just three nights a week – Wednesday, Thursday and Friday. Affectionately called “The M Room” after Chef Murakami, the 250-square-foot space gives guests an around 18-course, interactive tasting experience with Chef Murakami complete with authentic Japanese hospitality, fish flown in weekly from The Tokyo Fish Market and diligently sourced lobster from Maine.

 

Designed by British luxury designer Tom Dixon’s agency Design Research Studio (DRS) and Gareth Payne of Gareth Payne Studios, The M Room’s bright, serene space is designed in sharp contrast from its counterpart downstairs and allows for Chef Murakami and his dishes to take center stage. Guests sit in comfortable bar stools at a sleek, white maple chef’s counter and overlook Chef crafting each bite. The menu changes based on what inspires him each week and features the likes of scallop topped with caviar, a comparative tasting of three pieces of fatty tuna sourced from different waters, and unexpected flavor plays, like Wagyu with harissa. Guests can order cocktails, premium sake and wine and Japanese beer, or bring their own with a corkage fee.

 

The M Room features white yakisugi walls – an ancient Japanese technique consisting of charring cedar boards to add texture to surfaces – Tom Dixon white globe pendants and an oversized painting on acrylic by Todd Murphy. Each course is served on serveware sourced mainly from small Japanese artisans who make very limited quantities, and beverages come in Baccarat crystal glassware, vintage sake glasses and Josephinenhütte wine glasses.

 

Himitsu

Himitsu, which translates to “secret” in Japanese, is a Japanese craft cocktail lounge located next door to Umi. Intended to complement a night out at Umi or M by Tasuku Murakami, the team serves cocktails created by renowned beverage expert Shingo Gokan alongside spirits, sake, wine and a tight selection of best-of dishes from Umi.

 

Private Dining

M by Tasuku Murakami, which accommodates up to eight guests at the omakase chef’s counter, and Umi’s private dining room, The Murphy Room, are available for private events. Named after Todd Murphy who designed Umi 11 years ago, The Murphy Room can accommodate 30 seated guests as well as standing receptions. The moody room is anchored by a Todd Murphy 1993 piece called The Swimmer and features a 19-foot black walnut table, Tom Dixon dining chairs and 45 brass sculptural pendant lights above, also by Tom Dixon.
