Founder Charles Luce began developing gluten-free bread recipes after being diagnosed with celiac disease in 2002. Over the past nine years, he has perfected his four bread creations using simple allergen free grains that yield original and exciting flavors: New Italian, Bold Buckwheat, Classic Sourdough and the new OMG Flatbread. Luce’s flours are also free of dairy, egg, oils and soy, all ingredients that never need to be added to the mixes.
Luce developed techniques to ensure that his wonderful breads will not crumble or stale quickly. Once baked, the breads remain fresh and tasty for up to four days.
“The secret to baking great gluten-free bread is not striving to make it taste like traditional bread,” says Luce. “Instead, I brought out the best flavors in grains that are naturally gluten-free. Everyone can enjoy Luce’s, whether they have special dietary needs or not.”
Each packaged flour blend makes one 13-ounce crusty artisan loaf (9 USDA servings). The dough can be mixed by hand and does not need a baking pan. Shaped on the support sheet, it is slipped into the included bag and put directly into the oven. The baking bag controls humidity to produce a crackly crust and moist, tender crumb. “Anyone can make these breads,” says Luce. “It only takes about 90 minutes from start to finish.”
