The Kimpton Journeyman Hotel proudly announces the appointment of Paul Funk to Executive Chef, where he will oversee all culinary operations for the property including Tre Rivali and The Outsider rooftop bar. A Wisconsin native with over two decades of culinary experience, Chef Funk brings a rich background and a passion for bold, Mediterranean-inspired flavors to his new role.
Tre Rivali, the hotel’s signature restaurant, will see exciting menu updates under Chef Funk’s leadership. Chef Funk plans to expand the menu to embrace the entire Mediterranean region – incorporating dishes from Turkey, Syria, and Morocco while still staying true to the concept’s Italian roots.
“We’ll always have an Italian base, but I’m excited to branch out and introduce bold, communal flavors from across the Mediterranean,” said Funk. “ These cuisines really focus on the joy of sharing dishes with friends and loved ones – and I want to incorporate more of that spirit into our menu. I’m planning on introducing a large-format dish that will be on the menu year-round and that is perfect for special occasions.”
Chef Funk’s culinary passion was ignited in first grade, inspired by the classic folk story “Stone Soup”. He learned how to cook from his grandmother and would routinely call her to gather advice and next steps while experimenting in the kitchen. His early career began in Colorado, where he completed a culinary apprenticeship at Keystone Resort. His journey led him to fine-dining establishments, private chef roles, and a transformative experience in Florence, Italy, where he spent months learning traditional Italian techniques, from crafting sheep’s milk ricotta to butchering and making salumi. Chef Funk returned to the Midwest in 2010, where he worked at notable Milwaukee establishments such as Hinterland Erie Street Gastropub and Like Minds Brewing Company. His extensive experience in hotels, including his tenure with Marcus Group properties like Grand Geneva and St. Kate, solidified his expertise in multi-outlet dining operations.
As Chef Funk takes the helm at the Kimpton Journeyman, he is eager to enhance the guest experience and continue the hotel’s tradition of hospitality. “There’s something special about this place,” said Funk. “Tre Rivali and The Outsider are unique spaces that bring together a community of talented people, and I’m excited to be part of it.”
Chef Funk, a father of two and an avid woodworker in his free time, is thrilled to work in his home state after a diverse career in fine dining and hotels across the U.S. and Europe. A true family man, Chef Funk is committed to creating a welcoming, community-centered environment at the hotel.
