Joey Simons Joins Estiatorio Milos as Chief Executive Officer

Estiatorio Milos, the family-owned and internationally acclaimed Greek restaurant empire founded in 1979 by Greek-born-and-raised restaurateur Costas Spiliadis, announces the appointment of hospitality vet Joey Simons as Chief Executive Officer. As the first-ever CEO of Milos, Simons will spearhead and work alongside founder Costas Spiliadis, George Spiliadis, and family to oversee the Greek restaurant and lifestyle brand’s expansion across the globe. Estiatorio Milos currently has locations in New York City, Montreal, Athens, Las Vegas, Miami, London, Los Cabos, Dubai and Singapore and is opening in Los Angeles, West Palm Beach and Toronto in the coming year.

Joey brings over 15 years of expertise to Milos, driving vision and strategy across multi-property hospitality operations. He has a proven track record of adding millions of dollars in revenue and delivering large scale projects in his previous roles. He has also motivated large teams of employees to deliver top-quality experiences and customer satisfaction through training, coaching, and mentoring.

Before this announcement, Joey Simons was most recently the Chief Executive Officer of Montclair Hospitality Group (MHG), a leading chef-driven hospitality group focused on curating unique restaurant brands and experiences.

 

Prior to his work with MHG, Joey served as Chief Operating Officer and Chief of Staff for sbe, the pioneer of lifestyle hospitality. As part of sbe’s leadership team, Joey worked to develop visionary chef-led concepts and led the operations to deliver award-winning culinary experiences including full service restaurants, nightlife/daylife venues, lifestyle food halls and fast casual restaurants.
