4 slices bacon, chopped
1 granny smith apple, peeled and finely diced
1 tbsp lemon juice
½ cup unsweetened applesauce
1 tbsp maple syrup
70 g Jarlsberg, cut into small cubes
1 pkg frozen puff pastry, thawed
1 egg, lightly beaten
Cook bacon pieces until crispy. Drain and place in a large bowl. Add diced apple, lemon juice, apple sauce, maple syrup and Jarlsberg. Mix well.
Pre-heat oven to 400F. Unfold puff pastry sheets, and repair any cracks by pressing dough back together. Sprinkle with a bit of flour, and roll each sheet out to a thickness of about 1/8 inch. Cut the sheets into 12 equal squares. Lightly brush edges of squares with beaten egg. Place about 1 tbsp of apple filling in the center of each square. Fold over puff pastry to create a triangle and gently press edges together. Using a fork, press edges to seal. Brush outer edges with beaten egg.
Place turnovers on a baking tray, leaving about 1 inch between them. Prick tops of turnovers a few times with a fork.
Bake for 20-25 minutes, or until turnovers are puffed and golden brown. Let stand for 5 minutes before enjoying.
