Celebrity chef to open Windows restaurant on the 14th floor of Sheraton on the Falls
He’s forged his reputation as one of Canada’s top chefs through his devotion to seasonally-inspired cuisine made with only the finest and freshest local ingredients.
His name has become synonymous with culinary sustainability in Canada, green cuisine and innovative farm-to-table menus.
Now Niagara is about to learn what renowned chef Jamie Kennedy has in store for its own visitors and residents.
Kennedy will launch his newest restaurant — Windows by Jamie Kennedy — in the heart of the Niagara Falls tourist district, putting his own unique flavour on the bounty of fresh foods grown and nurtured in the Niagara Peninsula. This revolutionary dining experience, part of the Falls Avenue Resort, will encompass all that Chef Kennedy stands for: local gastronomy with farm-to-table dishes accompanied by an extensive wine list as selected by one of Canada’s leading authorities on wine, Tony Aspler. “We have been practicing the farm-to-table philosophy in the Toronto area for many years now, so I see coming to Niagara Falls as an opportunity to bridge this fantastic, internationally-known attraction with what is going on in both the wine world and the food world,” Chef Kennedy says. “We will be engaging the local community. Whatever is in season in Niagara is going to be found on our menu.”
The restaurant will feature contemporary, regional-based Canadian cuisine with a foundation in the classic French tradition and sourced from the finest farmers, fisheries and artisans. The wine list at Windows will feature an extensive list of local and rare wines by the glass, with an emphasis on VQA labels that are the best Ontario has to offer. Selected wines will be showcased in a walk-in glassed wine cellar that guests are free to explore. Master Sommelier Bruce Wallner, one of only three master sommeliers in Canada, will be available to help select wines that enhance diners’ dinner choices, or they can choose to explore the extensive, Niagara-rich wine list on their own.
“Niagara is the centre of the wine industry in Canada,” says Aspler, who will be building the wine list and stocking the wine cellar for Windows by Jamie Kennedy. “Niagara is producing some excellent wines, and they are all competing to be on the list. Together, Chef Kennedy and I are going to create some really wonderful culinary experiences.”
