The award-winning Skirvin Hotel has just announced that 2023 James Beard Award-winning Chef, Andrew Black, will helm the new restaurant to be opened on the hotel’s first floor. For 112 years, the Skirvin has remained a beloved landmark in the heart of Downtown Oklahoma City—and it was at the Skirvin that Chef Black launched his Oklahoma career 16 years ago.

“Chef Black brings a world of culinary talent and vision to our team. Chef Black’s career began in his home country of Jamaica, where he worked in the kitchen at a local resort. His career as a chef has taken him to some of the most esteemed restaurants worldwide, including the Peabody Hotel, the Ritz in Paris, and the Skirvin Hotel upon its reopening in 2007. He has since opened several elevated dining concepts in Oklahoma, including Grey Sweater, Black Walnut, and Gilded Acorn.
Now, Chef Black will open a new concept, Perle Mesta, inside the iconic Skirvin Hotel. His newest venture takes its name from the convivial daughter of W.B. Skirvin and celebrated “Hostess with the Mostest.” This momentous pairing brings Chef Black’s passion and precision to life in a luxurious and intriguing atmosphere.
“It feels like I am going back home to my family, where it all began. This is just the beginning, ” said Chef Black during the unveiling event Sunday evening.
