Former Executive Chef of Enrique Olvera’s Legendary Pujol Restaurant
Hotel Matilda has named one of Mexico City’s most acclaimed chefs, Francisco Ibañez, the executive chef of Moxi.
Ibañez comes to Moxi from Pujol, where he was executive chef of Enrique Olvera’s internationally celebrated restaurant that has long been rated the best in Mexico and among the best in the world.
“Francisco has introduced a new menu at Moxi that is already getting rave reviews for its authentic Mexican flavors, organic ingredients and simple but sophisticated preparations,” said Bruce James, Director of Hotel Matilda. “He is making big waves in San Miguel with his hearty and innovative take on contemporary Mexican cuisine.”
With a culinary identity that incorporates both its Mexican heritage and its cutting-edge, contemporary ambiance and spirit, Moxi has built a reputation as an exciting and modern dining experience that the hotel’s savvy and well-traveled guests want and expect. Moxi is known for its extravagant Supper Clubs, one-of-a-kind dining events that feature famous guest chefs and original menus. Moxi means “craving” in the language of the Otomi, the native people of the region for whom San Miguel de Allende has long been a cultural hub.
“Francisco’s new menu captures the culinary imagination of today with extraordinary flavors and creative combinations that are based in tradition and deeply satisfying,” said James.
