Guy Fieri’s El Burro Borracho Now Open at Rio All-Suite Hotel & Casino

El Burro Borracho, a Mexican-inspired restaurant concept from chef, restaurateur, New York Times best-selling author and Emmy Award-winning television host, Guy Fieri, is now open at Rio All-Suite Hotel & Casino. The restaurant is Fieri’s second Las Vegas restaurant, a follow up to his popular Guy Fieri’s Vegas Kitchen & Bar at The LINQ Hotel & Casino, which launched in April 2014.
The restaurant celebrated its grand opening on Friday, April 1 with Fieri, handing out samples of his signature Trash Can Nachos, Corn off the Cob and Caliente Margaritas to a huge, eager crowd at VooDoo Beach, adjacent to El Burro Borracho. Also present to officially welcome Fieri and his restaurant to the Rio were Gary Selesner, Regional President of Caesars; Steve Ellis, Vice President and General Manager of the Rio; several members of the Chippendales and the cast of Rock of Ages, who delighted the crowd with an impromptu performance.
“We’re bringin’ real deal Mexican food poolside at the Rio. I can’t even say it’s a dream come true because I couldn’t ever have dreamed it,” said Fieri.
El Burro Borracho, or the Drunken Donkey in its literal translation, brings a vibrant, fun atmosphere with the Guy Fieri touch. Guests enjoy authentically prepared Mexican dishes with upscale touches and the signature, flavorful flair you would expect from Fieri. Crispy Mahi Mahi Juan Tacos, Flaming Queso Fundido, Acapulco Gold Salad, Drunken Fish Tacos, Lava Rock Shrimp, signature tortas, enchiladas, burritos and an array of house-made, proprietary salsas are just a few of the items available on the menu.
It wouldn’t be a Guy Fieri restaurant in Las Vegas without a signature burger, and El Burro Borracho features three versions from which guests may choose: El Gringo, a ground beef burger with Mexicana mac ‘n’ cheese, cheddar cheese, Applewood smoked bacon, lettuce, tomato, onion, pickle, burro sauce and crispy tortillas on a garlic buttered, toasted torta bun; El Hombre, a burger that kicks it up a notch with smashed beef machaca, melty queso casero, pepper jack cheese, black beans, salsa molcajete, shaved jalapeno, lettuce, tomato, onion, pickle, burro sauce, crispy tortillas, gauamole and pico de gallo on a garlic buttered, toasted torta bun; and the Caliente Chorizo Loco, a spicy chorizo and ground beef burger blend topped with melty queso casero, pepper jack cheese, pineapple & serrano salsa, lettuce, tomato, onion, pickle, burro sauce, crispy tortillas, crema and cilantro on a garlic buttered, toasted torta bun.
In addition to the over-the-top Mexican fare, El Burro Borracho also boasts an impressive lineup of margaritas and tequilas. Signature margaritas include the Caliente Margarita, Fieri’s world-famous signature jalapeno-infused el Jimador Tequila, triple sec, fresh cilantro and house-made margarita mix and the Pineapple Habanero Margarita made from habanero puree infused with blanco tequila, triple sec, pineapple chunks and house-made margarita mix. El Burro Borracho also offers 25 different tequila variations and three unique tequila flights.
El Burro Borracho is steps away from the lively VooDoo Beach pool and beginning April 4, will be serving tacos pool-side at a walk-up, conveniently located taco bar located in the side closest to the pool. El Burro Borracho is open for dinner nightly from 4p.m. to 10 p.m.
