Presentation: “Farm to School Movement: Evolution and Future”
Farm to school enriches the connection communities have with fresh, healthy food and local food producers by changing food purchasing and education practices at schools and preschools. Students gain access to healthy, local foods as well as education opportunities such as school gardens, cooking lessons and farm field trips. Farm to school empowers children and their families to make informed food choices while strengthening the local economy and contributing to vibrant communities. The farm to school movement has grown from a handful of schools in the late 1990s to approximately 38,000 schools in all 50 states as of 2014, with significant policy gains at local, state and federal levels.
The session will highlight the key influencers for this phenomenal growth, address challenges faced, and discuss future opportunities for furthering the successes of farm to school to the broader movement to support local and regional food systems. Lessons from the farm to school movement, which works inside the complex system that feeds and educates K-12 and preschool children in the United States can be useful for food system changes we desire in communities across the globe.

Chef, Richmond Station
Presentation – “The Whole Animal Process”
Carl and Ryan have created a new restaurant model: one that allows for local whole animal purchasing and production inside a 100-seat restaurant. This new restaurant model is successful and viable with numbers that track better than the standard restaurant model. If you’ve ever been told that buying local and buying direct from the farm is not sustainable in the long-term, Carl and Ryan will show you otherwise. Not only does this work, it’s an improvement on the standard model.
Richmond Station is a stopping place, a bustling neighborhood restaurant in the downtown core committed to delicious food and excellent hospitality. Winner of the Clefs D’or Golden Plate Award, listed as one of 100 Restaurants In Thew World Worth A Pilgrimage by Food & Wine and consistently listed #1 in Toronto by TripAdvisor: Richmond Station opened in October of 2012 and has quickly become one of Toronto’s most treasured restaurants.
