The highly anticipated complement to Bumbleberry Flats, Carve Deli and The Pioneer Hotel and Gambling Hall is the arrival of Chef Johnny Flores to share his culinary proficiencies, innovative and addictive techniques and true passion for the art of hospitality and food.
Chef Johnny is a welcome addition to the team with 20 years of dedication to his craft. He has honed his cooking skills in some of the finest kitchens including Celebrity Chef Michael Mina’s James Beard Award winning restaurant at the famed Bellagio Hotel in Las Vegas, as well as in dining rooms at the MGM Grand and then helming as Executive Chef of the Aria Hotel Las Vegas, a crown jewel at City Center of over 4,004 guest rooms and more than 15 restaurants serving cuisines from the country’s most recognizable culinary talents.

“A calm, pleasant, helpful and hardworking individual who has a passion for great food and getting it right the first time” is how Chef Johnny considers himself in the kitchen. “I like the buzz of a busy kitchen and the pleasure of seeing happy faces enjoying a good meal that the team came together to create.” As a natural leader Johnny was exposed early to the skill and commitment of his culinary craft coming from a lineage of culinary masters. His father, a cultivated culinarian in his time taught Johnny the finesse of quality ingredients and preparation. Johnny has taken that know-how and understands that even the simplest item can be cooked with care and attention to produce the flavor bursts that bring people back again and again. He has the knowledge and systems to build a team that can produce guest satisfaction and yet understands the freedom of expression it takes to create award winning food.
