Initially created as zero-proof by renowned mixologist Jarl de Vries, ette cocktails have evolved to include exotic spirits. Each spirit, expertly sourced from a different corner of the globe, has its own unique flavor profile and story. Offered neat, on the rocks, straight up and as a shot, ette spirits cultivate a special experience.
In addition to the original list of cocktails, several new concoctions have been released to spotlight the unique nature of each spirit. La Vie En Rose offers guests with a fruitier pallet the combination of dragon fruit syrup, lemon, lychee and mint juice with gin. The Isla Paradiso cocktail transports guests to island time with a blend of tequila, cream of coconut and pineapple juice.
Signature, fan-favorite mocktails from the original menu are available with or without spirits. The classic creation, Into The Woods, features fresh green herbs, ginger, cucumber, lime and cookie crumbles which fuse together to make an earthy, herbaceous concoction. Served atop a garden-like bed with live mushrooms and a forest aromatic mist, the impressive presentation polishes off the cocktail.

Jarl de Vries, an international mixology connoisseur, came to ette as a cocktail professor with extensive experience in hospitality consulting. Tasked with developing a cocktail selection to compliment the level of sophistication of Salt & The Cellar menu offerings, Vries adopted an innovative mindset. The combination of high-quality spirits, homemade tinctures and infusions accompanied by elaborate presentations make for an enthralling time at ette.

Along with the addition of spirits to ette’s cocktails came the introduction of social hour at Salt & The Cellar. Monday to Thursday from 4 p.m. to 7 p.m., guests are invited to indulge in an exclusive selection of tapas and cocktails. The AB taco dish, beef, tomato ponzu, kochujang and micro cilantro are among the menu items.
