El Silencio, the Ibizan beach house from iconic Parisian brand Silencio, is pleased to announce their season opening for 6th May 2022, with a new restaurant concept by three-Michelin starred Chef Mauro Colagreco. Hailing from Argentina, Colagreco has designed a menu with his long-time friend and master of oven-fire cooking, Federico Desseno, based around his passion for flame cooking and love of convivial dining experiences.
EL SILENCIO Chef Mauro Colagreco to Open Ibiza Restaurant
Open seven days a week, El Silencio’s restaurant features a menu inspired by the Mediterranean way of life and the region’s culture of hospitality, with Colagreco making use of the freshest of ingredients available on the island, cooked freely over open flames. In addition, cocktails will be fronted by regular Silencio collaborator Remy Savage, the French-Irish master mixologist, part of The World’s 50 Best Bars.
Wonderful for drawn out lunches and dinners overlooking the luxurious Balearic seas, the menu begins with lighter plates that include a shrimp aguachile, finished with crisp granny smith, coriander and chilli; a classic Peruvian ceviche, with fresh peach, chill and lime; and a variety of fresh and vibrant salads, including garlic roasted beetroot with manchego and an orange and thyme dressing.
Dishes served straight from the fire will feature grilled red prawns with aioli, salt and lemon, a dish that celebrates the quality of the local ingredients in its simplicity; and extra-large anchovies, grilled and topped with wild thyme. Dishes from the clay oven will include a soup of fresh fish and shellfish; as well as a selection of other plates and fresh pizzas. Larger dishes to share will include a grilled steak served with onions cooked in the ashes of the fire, chimichurri and a rustic green salad; a dish inspired by Mauro’s childhood in Argentina where an asado, a traditional Argentinian barbecue, would be a drawn out and slow paced affair with loved ones, taking over an entire afternoon.
Mauro says; ‘I have a special connection with Spain, it’s linked with my origins, my first language and I really love the Spanish culture and way of life. The ambiance made by the warmth and hospitality of people is incredible. Thus, I’m excited to embrace the beautiful nature of the island and its incredible produce this Summer at El Silencio’
“With Mauro, I share the same passion for open fire cooking. The menu highlights this passion with simple dishes to sublimate the beauty of the fresh products from the Island.” Federico Desseno says.
The beach house will open in its entirety on 1st June, when the restaurant will be joined by two other main areas. One is an immersive art installation from Brazilian artist Samuel de Saboia. Currently residing in Ibiza, Samuel has transformed El Silencio into a dreamland, a place where kindred spirits celebrate and have fun. This installation will play host to a contemporary tapas restaurant programmed by chef Guillaume Sanchez. The other area is a poolside cocktail bar, with daily pool parties from the likes of ChaCha, Magic Sunset or Jazz Pool.
