In ever-expanding Downtown Los Angeles, The Mayfair Hotel has announced a new expansion to their talented team: Eric Willhite, who has joined as General Manager of Food and Beverage Operations. Willhite will be overseeing all food and beverage operations at The Mayfair Hotel including room service, banquets and its signature restaurant Eve as well as the M Bar in the hotel’s lobby and the sultry Library Bar.
Willhite holds a strong track record of culinary expertise in his former position as Director of Outlets at The Hollywood Roosevelt and Assistant General Manager of The Bazaar by José Andrés at the SLS Beverly Hills. There, he oversaw multiple food and beverage locations and assisted in developing these their culinary programming. Willhite also worked as a manager at TAO Group and The One Group.

In July 2018, The Mayfair Hotel — an historic 1926 hotel located in the emerging Westlake neighborhood of Downtown Los Angeles — unveiled a top-to-bottom renovation led by Los Angeles-based, Icelandic architect and interior designer Gulla Jónsdóttir and Artist-in-Residence Kelly “RISK” Graval. Along with RISK, Los Angeles-based talent management group Regime 72 curates and manages the hotel’s immersive entertainment experience.
The Mayfair’s multi-faceted dining and bar options include M Bar, located in the lobby lounge, Library Bar and the hotel’s signature restaurant, Eve American Bistro. This stylish eatery was named after Eve Cressy, the main character of Raymond Chandler’s short story “I’ll Be Waiting,” which he wrote while living at Mayfair Hotel in the 1930s. Additional enhanced amenities include the exposed brick-walled ballroom, where the first Academy Awards after party was held, a newly constructed podcast studio, and an art gallery featuring curated art available for purchase. A large outdoor pool and fitness center located off the third floor will open in mid-2019. The Mayfair Hotel experience centers on inclusivity with the property acting as a living room for guests and locals alike.
