Chef Orli del Angel has been promoted to Executive Chef, Chef Yvan Mucharraz returns to the brand as Culinary Experiences Director, and Santiago Canseco has been appointed as Director of Food & Beverage. These appointments underscore the brand’s commitment to offering one-of-a-kind culinary experiences. Together Chef del Angel and Mucharraz will continue to enhance the resort’s various dining venues, COMAL, YAYA, TnT, and El Molino Coffee Shop, and execute elevated partnerships and events for guests.

Chef Orli del Angel steps into his role as Executive Chef having left an indelible mark on the culinary team at Chileno Bay after joining the resort in 2021 as Executive Sous Chef. He began his culinary journey in Mexico City and brings with him an impressive career working with notable chefs in esteemed kitchens around the world including Mauro Colagreco, Martin Berasategui, Alex Atala, Guillermo Gonzalez, and recently at The French Laundry in Napa. He honed his leadership skills as head chef at Jorge Vallejo’s acclaimed restaurant Quintonil, leveraging his experience at Chileno Bay and contributing to COMAL earning a mention in Michelin’s first-ever Mexico Guide.
Chef Yvan Mucharraz returns to Auberge Resorts Collection as the Culinary Experiences Director at Chileno Bay. Chef Mucharraz joined the resort in 2016 as Executive Chef of Culinary Experiences, developing the culture and identity at COMAL. Throughout his 8 years with the resort, he extended his expertise and support to sister properties, including Solage, Auberge Resorts Collection, The Lodge at Blue Sky, Auberge Resorts Collection, Hacienda AltaGracia, Auberge Resorts Collection, Wildflower Farms, Auberge Resorts Collection and more. Under his direction, Chileno Bay was recognized with illustrious awards such as LA LISTE 1000 Best Restaurants in the World 2020 and the MexBest award for Best Hotel Restaurant in 2022. He has built a distinguished career in the hospitality industry across Mexico, the United States, and France – working alongside some of the brightest culinary luminaries, including L’atelier De Joël Robuchon in Paris, and Chef Thomas Keller at The French Laundry. He brings an abundance of culinary expertise and passion for delivering unparalleled dining experiences.
As Director of Food & Beverage, Canseco will oversee operations across the various on-property dining destinations. Canseco joined Auberge Resorts Collection in June 2021 with the opening of Etéreo, Auberge Resorts Collection. During his tenure, he contributed to the successful launch of Susurros del Corazón, Auberge Resorts Collection before joining Chileno Bay in 2023 as the Director of Outlets. He also played a supporting role with Bishop’s Lodge, Auberge Resorts Collection in a task force capacity. He holds certification from the prestigious Court of Master Sommeliers and will continue to share his wealth of operational experience in the culinary hospitality industry.
Chef del Angel and Chef Mucharraz will celebrate their new partnership with an exclusive beachfront dining experience Oaxaca by COMAL. Available from August 15 through September 19, 2024, this limited-time culinary experience will offer diners an opportunity to discover the essence of Latin American cuisine through a showcase of Oaxacan-inspired dishes, expertly prepared on the Tomasa smoker and open-air grill and set against the picturesque Chileno Bay.
