Raised, An Urban Rooftop Bar, is proud to announce the appointment of Sarah LaShure as its new Bar Manager. With extensive experience in hospitality and beverage program development, LaShure brings a fresh perspective and a deep passion for mixology to one of Chicago’s most iconic rooftop destinations.
Since its opening, Raised has distinguished itself as a leader in Chicago’s cocktail scene, offering guests a carefully curated beverage program that prioritizes locally sourced ingredients, sustainable practices, and an unparalleled rooftop experience. Under LaShure’s leadership, Raised will continue to elevate its offerings, blending innovation with approachability to create a cocktail menu that caters to both adventurous spirit enthusiasts and those looking for classic, well-balanced drinks.
LaShure’s career began at 3 Floyds Brewery in Indiana, where she worked across multiple front-of-house roles before stepping into management. After relocating to Chicago, she honed her craft at the renowned Lost Lake, where she managed its to-go cocktail program and underwent rigorous bartending training. She later held a leadership role with 16” On Center, overseeing beverage programs for multiple venues and further expanding her expertise in operations and menu development.
“I was drawn to Raised not only for its breathtaking views but also for its commitment to a well-crafted, intentional beverage program,” said LaShure. “My goal is to create cocktails that are both unique and accessible, ensuring that every guest finds a drink they love while introducing new and exciting flavors to the menu.”
LaShure’s appointment comes at an exciting time for Raised, as the bar prepares to launch its brand new spring menu, featuring a mix of signature creations and inventive seasonal offerings. She is particularly passionate about exploring emerging industry trends, such as the Martini Renaissance and the resurgence of reimagined classic cocktails, while further integrating locally sourced ingredients into the bar’s cocktail program.
