Palm&Pine is the place where exceptional cuisine meets a story of love and partnership. Led by the dynamic culinary duo, Chefs Jordan Herndon and Amarys Koenig Herndon, with over a decade of shared passion and dedication, they’ve built a beautiful partnership in life and a thriving one in the kitchen, creating dishes that tell the story of their journey together.
Their story began in New Braunfels, Texas, where they met while working at a restaurant. Jordan had just completed front-of-house training, while Amarys was beginning her own. Recognizing a shared commitment to excellence, Jordan offered his notes to help her along the way. Their bond grew from that moment, and together, they created something unique.
“We each bring different strengths to the table, both in cooking and running our restaurant,” says Amarys. “By playing to our individual strengths and trusting each other, we cover all the bases while working toward the same vision for Palm&Pine. This team mentality fuels our restaurant’s success and protects and strengthens our relationship.”
Over the years, they’ve learned to balance their drive and competitive natures, dividing roles in the restaurant to honor who they are both individually and together. This collaboration allows them to celebrate each other’s wins as personal triumphs, fostering a sense of pride and mutual support that transcends their professional lives.
The journey that led them to Palm&Pine began in the kitchens of New Orleans’ acclaimed restaurants Ralph’s on the Park and Bayona, where they each served as Sous Chefs. In 2009, they launched the pop-up The Old Portage at Black Penny in the French Quarter, and a decade later, they brought their culinary vision to Rampart Street, turning a blank space into the vibrant, beloved restaurant that Palm&Pine is today.
Jordan and Amarys’s journey has been shaped by love, hard work, and the belief that great food is meant to bring people together. They are proud to share that love with every guest who walks through our doors.
