Chef Brian Malarkey’s acclaimed ocean-to-table concept, Herringbone, will open the doors of its new Las Vegas location on Monday, December 28th at AAA Five Diamond ARIA Resort and Casino. Like its successful flagship La Jolla, CA and recently opened Santa Monica, CA locations, the celebrated restaurant will stay true to the fresh, beachy-chic roots, offering new, market-driven offerings from Executive Chef Geno Bernardo; relaxed yet refined décor, complete with indoor and outdoor seating and live music. In the spirit of the season, the new culinary hotspot also will offer two celebratory New Year’s Eve packages for local and visiting revelers to ring in 2016.
“Las Vegas is the ultimate destination for New Year’s Eve, and I’m thrilled to bring Herringbone – a restaurant I’ve put my heart and soul into – to ARIA during such an exciting time,” said Malarkey, who opened his acclaimed Searsucker in Las Vegas last spring. “I couldn’t think of a better time to celebrate the opening with the community here.”
The restaurant’s menu will pair pristine seafood and responsibly sourced meat with Farmers Market produce, creating an accessible menu infused with Malarkey’s well-known sense of culinary creativity. Before the New Year’s diets begin, diners can indulge in Herringbone Las Vegas’ NYE pre-fixe menu, which will feature signature items such as Baja Stone Crab with crispy rice, Chinese sausage, ginger, cilantro, chilies, peanuts and Bone Marrow & Escargot with garlic and parsley sauce, washed down with a refreshing, handcrafted cocktail anchored in the restaurant’s market-driven sensibility. Fanciful cocktail specialties will include The Grow a Pear with cucumber-infused gin, cilantro, jalapeño, St. Germain and lemon, as well as ‘A Buncha Malarkey’ with Jack Daniels, Ancho Reyes Chili Liqueur, mint, lemon and peach bitters. All featured dishes and speciality drinks will evoke the restaurant’s signature “Fish Meats Field” philosophy.
Conceptualized by acclaimed designer Munge Leung, Herringbone Las Vegas will charm visitors via a coastal aesthetic imagined with a modern sensibility. Inspired by trips to the shore, the sophisticated space will utilize a variety of light woods and warm, layered textiles, accented with eclectic, rustic touches. Outside, a sweeping patio surrounded by a lush garden landscape bring the restaurant’s locally sourced ethos to life, providing the ideal backdrop for a spirited al fresco meal.
Herringbone is located on ARIA’s second level promenade and will be open for lunch and dinner daily, with weekday Oyster Hour and weekend brunch to follow.
