Camelback Resort, a year-round recreational destination nestled in the Pocono Mountains, has named Jameson Cesar as vice president of food and beverage, supervising all operations of the resort’s 19 dining outlets – from food trucks to all-day casual to fine dining culinary concepts. Cesar’s 25 years of hospitality experience includes starting out as a dishwasher in Ocean City, N.J., at 13 years old to owning and creating multiple restaurant concepts to managing multiple dining outlets at prestigious resorts.

The dining portfolio at Camelback Resort includes fine dining Berrelli’s Italian Chophouse, Trails End Pub & Grille, Big Pocono Family Eatery, Burgers & More, Graffiti Pizza, Hemispheres, four food trucks and more. The collection features foods and drinks to satisfy a wide range of appetites and dining preferences – from visitors who want to grab a bite and scoot off to ski, zipline or swim to those who want treats that appeal to the whole family and to those guests who want to relax, sit back and enjoy gourmet dining, hand-crafted cocktails and fine wines.
As vice president of food and beverage, Cesar is motivated to position Camelback Resort as a sought-after dining destination for local, regional and beyond food lovers. “We are looking to make Camelback a must-visit for everyone’s travel list, a place for foodies, families, adventure seekers and corporate getaways,” says Cesar.

He is presently revamping menus for the upcoming summer season, refining the s’mores experience outside of Trails End Pub & Grille, introducing a special kids’ meal at the resort’s famous Aquatopia Indoor Waterpark and at Big Pocono Family Eatery and giving new life to Berrelli’s Italian Chophouse by offering a tableside experience, revamping the wine list and offering his twist on menu favorites.
Prior to joining Camelback Resort, Cesar served as director of food and beverage at a nearby Pennsylvania resort which included supervision of all the food outlets, banquet, catering and convention operations. He held the same position at Live! Dining & Entertainment Districts in partnership with Sporting KC in Kansas City, Mo. As director of operations at The Fennec in Birmingham, Ala., he was recruited to lead operations for this then new, 30,000-square-foot music event space. In addition, Cesar was on the opening team at Hard Rock Hotel and Casino and was an executive chef at Borgata Hotel and Casino, both in Atlantic City, N.J.
