A distinguished culinary professional with deep Italian-American roots, Chef Nicholas brings a wealth of experience and creativity to the Embarcadero waterfront restaurant. Known for his innovative approach to dining, he is currently hard at work crafting an entirely new menu that will debut on October 15, 2024, showcasing fresh, seasonal dishes inspired by the Mediterranean coast for the fall and winter seasons.
Since joining Alora, Chef Nicholas has been immersing himself in the restaurant’s culture and community, learning the preferences of its clientele, and familiarizing himself with the vibrant Embarcadero market. While his new menu is in development, he has already begun implementing smaller yet impactful changes, such as updating Alora’s signature sampler dips and reformatting the existing menu to enhance the dining experience. In addition, he is streamlining operational practices to ensure the highest standards are met in both kitchen performance and guest satisfaction.
Chef Nicholas, a graduate of the Culinary Institute of America (CIA), has had an illustrious career in the Bay Area, working with esteemed establishments such as SFMOMA’s grace and Lita in Walnut Creek. His diverse background and culinary travels through Italy, Monaco, and Spain have influenced his cooking philosophy, which centers on seasonal ingredients and immersive, multi-sensory dining experiences. At Alora, he envisions a four-dimensional culinary journey that combines bold flavors, interactive presentations, and ever-evolving menus to create unforgettable moments for guests.
