Southern California’s beloved diner chain, NORMS Restaurants, announces the appointment of Mark Politzer as president and chief executive officer. With over 25 years of management experience in luxury hospitality operations, Politzer brings a wealth of expertise from his previous positions at esteemed groups, including MINA Group, Mandarin Oriental Hotels, Four Seasons, and Relais & Châteaux.
Since opening its first location in 1949, NORMS has become synonymous with Californian diner culture. The locally cherished, nationally recognized establishment has maintained its deep connection to the various communities it serves for over seven decades. With plans to grow and refresh the brand, Politzer is committed to preserving NORMS’ legacy while elevating its reputation for “great food, great service, and great value” to reach new audiences.
A BIGGER, BETTER NORMS EXPERIENCE
Under Politzer’s leadership, NORMS is poised for a new era of strategic growth, employee development, and innovation. Having opened its first out-of-state location in Las Vegas in October of 2024, Politzer has ambitions to continue introducing the restaurant group to new markets, like Texas and Arizona, as well as expanding within Nevada and California. Regarding employee relations, NORMS is investing in strengthening internal employee engagement, professional development, and on-site training, all to ensure an exceptional guest experience. Innovation in all aspects of the business will play a crucial role in improving the overall brand experience, including enhanced menu offerings, pay-at-table technology through Ziosks, and unique partnerships. Revitalized restaurant designs and community-focused non-profit partnerships are also planned for the months ahead.

Hailing most recently as Chief Operating Officer at the MINA Group, Politzer brings a deep understanding of service excellence and operational strategy to his new role at NORMS. He will utilize his tenured experience in senior leadership roles with award-winning hospitality groups to build NORMS’ service-driven teams and achieve profitable growth in new markets.
