Wyndham Palmas Beach & Golf Resort Appoints Daniel Lugo as New Head Chef

Wyndham Palmas Beach & Golf Resort today announces the appointment of Daniel Lugo as the resort’s esteemed Head Chef. In this role, Lugo will spearhead the culinary vision and operations of the resort’s signature restaurant, Trova, and launch a new menu concept in 2025.

Eager to leave his mark on the island’s culinary landscape, Lugo will bring thoughtfully crafted dishes to Wyndham Palmas as his “love letter to Puerto Rico.” He plans to showcase Puerto Rican cuisine with innovative global influences, focusing on local ingredients and creative interpretations of traditional dishes.

Among the much-anticipated new offerings, Lugo introduces Pulpo al estilo Joyuda, a delicately plated dish of thinly sliced octopus, olive aioli, avocado, lime, “ají dulce,” and cilantro. Inspired by his childhood visits to Joyuda, a fishing village on Puerto Rico’s west coast, this dish pays homage to his favorite memory of “vasito de pulpo.” It showcases Lugo’s unique ability to elevate local ingredients and nostalgic flavors through innovative interpretations of traditional dishes, delivering a refined, modern culinary experience.

Lugo brings a distinguished track record from some of America’s most prestigious kitchens, along with a deep affinity for Puerto Rico and its authentic island flavors. Originally from Mayagüez, Lugo discovered his passion for food at a young age, cooking alongside his grandmother. After earning a bachelor’s degree in culinary management at the Universidad Del Este, he honed his skills at renowned restaurants across San Juan and Miami Beach before joining world-renowned Chef José Andrés in Washington DC. Over the next decade, Lugo worked as a Head Chef at several of Andrés’ prestigious concepts in Washington, D.C., including Jaleo, Zaytinya, Spanish diner and China Chilcano that was honored on the Michelin Guide Bib Gourmand list. Some other Lugo’s recent accomplishments are getting featured in the Michelin guide blog “How to make a paella at home” and participating in Stadium Chef Series to benefit James Beard Foundation.
